Hello forum i was wondering which set/combo is best for defense and or armor
best defense / armor set for level 500-650?

Nothing really great until 525-535... Then there's good stuff up until 575, then it just gets bad again...
You want to look into Gilded, Volim, Misfortune, Lamassu, Lamia for defense... War Wolf, Nuryns, Iron Spine for Armor... Might add Spidragon, Jabberwocky, Brides as "neutral" sets in there...
