I have a question about Instances in Eldevin. Is doing instances necessary? I dont mind doing a instance once but I really hate repeating same instance countless times to get gear/levels/etc.

To get the sets relevant to your level, yes they are.
Except the lvl30 set (which is crafted)

Can you level without the sets from the Instances? Yes, but it will be somewhat harder. End-game content (World Bosses and Ascended Instances) would be impossible without the highest available Instance set.
Bryn - Prophet - lvl 45
Ullr - Ranger - lvl 32
Thud - Warrior - lvl 16
Payn - Templar - lvl 16
Jinx - Mage - lvl 10

Well more accurately -- you can level just fine without instances to 40. Then I suggest you run TR until you get that set. With that set, gem it, and you can run BT/GR for your 45 set.
