I'm actually in the exact same boat as you. I love hoarding and collecting everything that the game has to offer.

I agree that there needs to be some additional meaningful progression in profession advancement that makes you feel like you are getting better at the skill. As it stands advancing your profession is very stagnant all through the leveling process, especially at the early levels.
You are exactly as efficient at farming that flax at level 40 farming as you are at level 16, and even level 1. Sure you can make more stuff, but aside from that the user doesn't feel any more proficient in the profession than they did when they started.
Some of the ideas mentioned in this thread would provide meaningful progression that is measurable and relatable to the users expectations. Increased yields, faster actions, or even additional tiers of basic materials would all be enjoyable.
