 Will there be holiday events added into the game after Eldevin is avaiable to all players and the game settles in after a few months, years, etc?

Definitely something we want to do, I know we'd love to have seasonal versions of Eldevin city :D Think an annual Burns night event is probably a must too due to where Hunted Cow are situated ;)
