Basically the higher stam attacks in PvE just means you have more potential swings to kill the monster. Gold/XP gain is the same regardless of attack level used.
In fact, even if you click the 60stam attack, but only take say 10 swings to kill the monster you'll still only use 10 stam.

You should be trying to kill mobs in one or two hits, if you are not then you need to have another look either at your equipment set up or the mobs you are trying to kill.. if you are missing a lot then your attack is not high enough.
Find a friendly guild to help you with buffs, advice etc.
Never, ever let a rat sense fear......
