Damage obviously is...just...damage...eh.
Armor decreases Damage taken. (1 point of Armor = 1 Damage decrease) If your armor is greater than your opponent's Damage then you take 1 damage.
HP is...just HP.
Attack: you need it to hit monsters. You always have a 2% change of missing regardless of attack.
Defense: If it's higher than your opponent's attack you won't get hit much.
To hit a monster your attack must be a bit above its defense, to kill a monster in one shot your damage must be above your opponant's Armor+HP.
Note: In PvP, lots of times there are 1-hit kills. That's because everybody's HP is often ridiculously low compared to the other stats, so just pumping up damage to a little over your target's armor will kill him.

Damage must be > Armor for you to hit more than 1 HP
Damage must be > Armor + HP for you to kill (that's excluding enhancements and such)
Same thing vice versa
